This is probably the most controversial dessert I’ve tasted in recent times. On the one hand, it is somewhat reminiscent of a sweet omelet, on the other, some kind of overexposed soufflé. But, the thought that the whole of France and half of the world is crazy about this dessert makes you think that it is delicious. Just for an amateur.
I know that many people who try clafoutis say it’s delicious, healthy and nutritious. But my personal opinion, if you really gorge on calories, then there are many other more delicious types and pastries and desserts, as such.

Frankly, this is my second clafoutis, the first was classic, with cherry. But, oddly enough, neither one nor the other made the proper impression on me. Whatever one may say, but the meaning and taste is the same – either a thick pancake with a bake or a sweet omelet. In fact, clafoutis can be made from any fruits and berries, but for some reason it is especially popular with peaches, apples or pears, I think there will be no third attempt. This is one of those desserts that either “hooks” or not. We were not hooked, but perhaps someone will like it.

Ingredients:
Apricots – 300-400 gr.
Flour – 100 gr.
Sugar – 140 gr.
Vanilla extract – to taste
Milk – 150 ml.
Egg – 4 pcs.
Butter – 40 gr. + a little oil to grease the mold
Powdered sugar – 1 tsp (for sprinkling)
Almond flakes – 2 tablespoons (for decoration)

Preparation:

  1. Wash the apricots under cold running water, cut them into halves and remove the seeds.
  2. Grease the baking dish with butter and put the apricots on the bottom.
  3. Heat butter in the microwave with short pulses.
  4. Combine eggs, sugar and melted butter in a separate bowl. Mix everything until smooth with a whisk. It is necessary to stir so that the mass becomes homogeneous, but not foamy.
  5. Sift the flour through a sieve and gradually add to the liquid ingredients.
  6. Stir the dough until smooth. As a result, the dough should turn out to be very similar to pancake.
  7. Pour the dough into a baking dish and sprinkle with almond petals on top.
  8. We send our clafouti into an oven preheated to 180C for 40-45 minutes.
  9. When the cake is ready, take it out of the oven, sprinkle with powdered sugar and serve.
